
Ingredients:
Firm tofu, sliced into squares
3 Eggplant, cut into small pieces
100g ground pork
1 onion, chopped
coconut oil for frying
1 tsp of dark soy sauce
a dash of sugar
a dash of black ground pepper
sesame oil, drizzle
Korean toasted sesame seeds
Pan-fry tofu in hot oil just until golden brown then Set aside. In a frying pan or wok, heat the coconut oil. Sauté onion and cook until fragrant then add ground pork and cook until brown. Add eggplant and cooked tofu. Mix until well combined. Lastly, Season with dark soy sauce, sugar and black ground pepper then mix again. cook for 5 minutes. Before serving, drizzle sesame oil and sesame seeds. Cover. Serve immediately.
