My Lazy Homemade Longganisa
I've been craving longganisa for months now, but my regular meat vendor is currently not selling it because she told me that due to African swine fever (a viral disease impacting only pigs), people are scared to buy frozen or processed meats resulting in lost sales. It will take a few months more before things go back to normal. With a heavy sigh, after we talked, I went home thinking I should find my longganisa recipe. It's so easy and most of the ingredients are pantry staples. I'm just plain lazy this year, so I stop making it.
All you need are the following:
- Ground pork (maybe 1/2 to 1 kilo depending on how many you want to make)
- Minced garlic (add more if you want it garlicky)
- 2 to 3 tbsp Worcestershire sauce (or soy sauce if you don't have this)
- 1/2 cup Brown sugar
- 1 tsp Black ground pepper
- A dash of Sweet cayenne peppers
- 2 tbsp Soy sauce
Mix together all ingredients by hands or by food processor. Form into logs and wrap each sausage in wax paper or cling wrap. Place sausage in a covered container and store in the freezer until ready to cook.
