Leftover Pinoy Longganisa Pasta
I must admit, I'm a sucker for Longganisa and if ever we have leftovers, I immediately set aside a few pieces for a pasta recipe. My love for it rooted way, way back when I was still in elementary school. My parents used to make them and I was able to make a commission by selling a few kilos to my teachers. Whatever was left was cooked for lunch or dinner. I never got tired of it and when I went to high school, I had it once a week. I learned that it tastes good when you dip it in a garlic-vinegar dipping sauce and the oil in which the longganisa was cooked are good as toppings on the rice. Longganisa became one of my ultimate comfort food.
Ingredients:
Leftover Longganisa, removed from casing and mashed
Pamplona Sausage, cut into strips
Dried Shrimp
Spaghettini
Tomatoes, chopped
Bell Pepper, cut into strips
Olive oil
Garlic, minced
White Onion, minced
Salt, Sugar and Ground Pepper to taste
Instructions:
Cook pasta according to package direction. Drain. Set aside. Heat oil then sauté garlic and onion for about 1-2 minutes. Add chorizo pamplona, dried shrimp and longganisa. Cook until it changes its color. Add tomato and bell pepper. Cook until tender. Season with pepper, sugar and salt. Cook for another 3 minutes. Serve immediately.
