
Spicy dilis or dried anchovies are a popular street food snack here in the Philippines. Pre-packaged and sold in sari-sari stores. Made out of dried dilis in a sweet and spicy coating. I used to buy this during my elementary years and got addicted to it. I usually ate it with a bowl of fried rice with slices of tomatoes and onions on the side. Just the thought of it makes my mouth water.
This simple finger food brings back lots of good memory that made me want to try making it myself so I can enjoy it anytime I want it. For my version, I used Sriracha and regular sugar. Next time I'm going to try Thebee and Panlasang Pinoy versions.
Ingredients:
Dried anchovies (good quality usually come from the south of the Philippines)
1 tbsp. cooking oil
3 tbsp. sugar
Sriracha (adjust the hotness base on your taste)
Instructions:
In a frying pan heat oil. Add dilis and stir-fry until dilis become crispy. Add Sriracha and sugar and mix well to distribute evenly. Once the sugar is caramelized, turn off the heat. Transfer to a bowl and cool.
