
Ingredients:
1 kilo pork
1 1/2 tablespoons vegetable oil
3 cloves garlic, minced
1 medium-sized onion, chopped
1 2-inch piece of ginger, sliced into strips
2 cups water
2 tablespoons soy sauce
2 pieces of star anise
4 tablespoons hoisin sauce
2 tablespoons oyster sauce
2 carrots, sliced into 3/4-inch-thick pieces
1 large red bell pepper, seeded and chopped
salt and sugar, to taste
sliced leeks, for garnish
2 tablespoons sesame oil, for drizzling
Instructions:
In a large pot over medium-high heat, heat oil and sauté garlic until fragrant. Add onions, ginger, and star anise. Continue to cook until the onions are translucent. Add pork and sauté for another 3 minutes or until pork is slightly brown. Add water, hoisin sauce, tomato sauce, soy sauce, and oyster sauce.
Simmer over low heat for 45 minutes or until pork is tender. Add more water if needed. Mix in carrots and bell peppers. Cook for 10 minutes or until vegetables is tender. Season with salt and sugar. Garnish with sliced leeks and drizzle with sesame oil before serving.
