Asian-style fried noodles

 

I'm a big fan of Hong Kong-style noodles and would love to eat them every day at home. Luckily, while browsing my growing collection of Yummy magazines I saw a recipe in their March 2011 issue. Now I can satisfy my cravings for instant noodles. :)


D-I-Y Noodles

Wash 2 cups of uncooked egg noodles with water; drain. In a bowl, mix together 1 tbsp chili paste, 2 tbsp oyster sauce, 1 tbsp soy sauce, 1/2 tsp sugar, and 1/2 cup water. Season with salt and pepper; set aside. Place 2 tbsp oil in a hot pan, and stir-fry 1 onion (sliced thinly) and 2 cloves garlic (chopped) until fragrant. Add the noodle; stir-fry for 1 minute. Pour in sauce; stir continuously until the noodles are cooked and the sauce is reduced. Stir in 1 cup of bean sprouts until well combined, about 15 seconds. Serve with siomai on top and garnish with chopped spring onions or leeks. Serves 2.
