GINISANG AMPALAYA (SAUTTED BITTER MELON)


They say that liking amplaya is an acquired taste because of its bitter taste. Well, I think the secret to making your kids eat this or any vegetables without any hesitation is introducing vegetables early to their tastebuds. My grandmother did the same thing to me that's why I love vegetables.

Ingredients:
3 medium size ampalaya
1 white onion, sliced
2 cloves garlic, crushed
3-4 tomatoes, chopped and seeds removed
3 eggs, beaten

Instructions:
Cut the ampalaya in half and scrape the white membrane then slice thinly. Put ampalaya in a saucepan. Add water enough to completely submerge the ampalaya. Cover and boil for 20-25 minutes. After 25 minutes, remove ampalaya slices from the water. Set aside. Beat eggs until frothy. Pour into a hot pan and stir frequently as they cook. Set aside. Sauté garlic and onion until transparent. Add tomatoes and cook until softened. Stir in ampalaya slices, salt and pepper, and scrambled eggs. Mix 2-3 times until blended. Cook for 5 minutes.
